There are two reasons coffee tastes so good. First, there are the flavors in coffee. Coffee is a lovely tropical plant, the seeds of which are then roasted, and you get flavors inherent in the seeds (called “beans”) and which are created or brought out by roasting: a touch of acidity, a fair amount of chocolatey richness, a certain amount of bitterness, a little toasty caramel aroma from the Maillard reactions the roasting creates, and maybe even some floral tones.

Therefore, making good coffee is the process of extracting as many of the desirable compounds (the caffeine, chlorogenic acid, volatile oils, and other stuff that tastes good and/or makes us smarter) from the coffee beans as possible while leaving behind as many of the undesirable compounds (the stuff that tastes bitter, sour, burnt, etc) as possible. The truth is, hotel coffeepots are rarely cleaned, and people have been known to do foul things in them. If the coffee pot has a dark, reddish-orange stain, it might've been used to brew methamphetamine, and the resulting coffee could be hazardous to your health. If there's a chemical smell in the room, that's another red flag.

Press pot coffee is coffee steeped for 3-4 minutes between 195 to 205°F. It produces a thicker and much richer taste than an auto-drip machine can produce. A disadvantage of the French Press is it may leave trace amounts of coffee sediment. But the rich taste more than makes up for the small amount of sediment at the bottom of your cup.

A fresh roast is definitely one of the most important factors in good Coffee (or Espresso). I normally frequent a smaller Coffee house that only uses freshly roasted beans. If the beans are more than a few days old, the owner gives them to charity and brings in a fresh batch. However, I have to agree that coffee ALWAYS seems to taste better in Italy!

It turns a bit as it cools, taking on a bitter aftertaste, but a quick drinker with a small mug should get by OK. A single caveat: Don’t microwave Maxwell House and expect to enjoy what comes out; it tastes unmistakably like airplane coffee, which in the grand hierarchy of complimentary coffee ranks just below single-serving hotel room coffee. For the price, even a coffee Scrooge like me would say you ought to just make a new pot.

One of the most overlooked details and differences between café-quality coffee and home-quality coffee is the other ingredient in the stuff: Water. While most of us are content to drink and brew with whatever comes out of the tap (or comes out of the tap and into the cheapo carbon filter we keep in the fridge and forget to change basically ever), any café worth its TDS has had more of a say in what's in the H2O.
